I bought some proving baskets as I fancied some prettier and more uniform breads. Left one a bit too long in the oven at a high temperature. Still tasty! I got the whirly pattern by removing the flour fabric.

Sourdough pancakes
So this morning was a mixed success. When you make sourdough you have to keep the culture fairly keen. To do that you throw away half of the culture every few days. This ensures that the extra flour you add every day is used slowly enough and the culture doesn’t starve.
Instead of throwing it away you can use it in soughdough pancakes!
Two eggs (from our chickens) beaten, added to two table spoons of sugar, 1.5 of baking powder, 1 teaspoon of salt, 1 tablespoon of water. Mix up and add 470ml of starter (about two cups) stir carefully not too much and stick in the frying pan. I used 1 cal spray oil.
When a few bubbles appear (not as many of this) flip!
Serve liberally with syrup
I thought they were pretty tasty. My starter is 50% brown and white flour, so a bit healthier than normal and the sourdough process is supposed to make it more easily digestible.
The flavour my starter provides is a bit like having added lemon to the mix. Both Helen and I added some syrup and enjoyed them, but Sam was less of a fan.
Sourdough
Its been a while, a couple of years really, since we used our starter.
I’d frozen some and it was hidden away in the freezer somewhere…
Anyway, I finally decided to ask Helen to do my dirty work and find it, after all she’d seen it and wanted it out of the freezer.
So she defrosted it and left it in the fridge. I gave it a sniff and identified it as houmous.
Another search later I found it in a vacuum pack bag.
So for the last week I’ve been faithfully feeding and stirring and its now bubbling occasionally. I hope.
Anyway, its now making a “sponge” so tomorrow I’m going to have a go at baking it over an open fire!
Pizza oven whitewash
Had a chance to put on a couple of layers of lime white wash over the dome. I’m really very surprised it came out so white as the first application was pretty much see-through. The 2nd application was less of a surprise (Even though it too was see-through) but I was pleased at quite how white it’s come out. Now just waiting for a free weekend for Tiff to come back and paint him!
Sourdough
One of the things I used to really enjoy was baking bread and I rarely get round to it anymore. So I found a supplier of sourdough starters (this is a 15 year old one) and got it going at home
Herman the German Friendship Cake
After 10 days of bubbling, Herman has been cut drawn and quartered into small slices.
Very tasty he was too!
